Blueberry & Carrot Oat Muffins (SW, WW & low calorie friendly)

New and updated baked oat recipe! This is just one version, so please check my blog for other baked oat ideas.

These baked oats are 1/2 syn for 7 muffins, using oats for your hexb, part hexa, so the only syn is the blueberries.

Blueberry and Carrot oat muffin recipe

  • 40g oats (hexb)
  • 40g grated carrot (speed)
  • 70/80mls of almond milk (part hexa)
  • 1 egg (protein)
  • 2 caps of vanilla extract or a flavouring of your choice (free)
  • 2 tsp cinnamon (free)
  • Blueberries (Free food and syns can vary depending on many you use, mine was 1/2 syn but please check your app to protect your weightloss)

***No sweetener needed

What you need;

  • Muffin tray
  • 7 silicone cases
  • Preheat your oven to 180 degrees

Measure your 40g oats and 40g carrots then put in a jug with your 80mls of milk and stir. Then add in your egg and mix throughly. Then add your cinnamon and flavouring of your choice. Combine all together.

Place your silicone cases onto your muffin tray or tray, then pour in the mixture. Weigh out your blueberries and then pop a few in each case. You can just drop them on like I did on push them right into the mixture.

Put into your oven on 180 for 25-30 mins. Then leave to cool for 3-5 mins. You can add maple syrup or choc shot for an extra treat but I quite like them as they are.

Serve with some speed food and yogurt or quark! Quark for extra protein and filling power 💪🏻

Peanut Butter Oat Cups recipe

I haven’t made baked oats in a while and I missed them. So I made a video which is live on YouTube and you can view it by clicking here.
These baked oats are 2 syns for both, using your hexb, part hexa and the 2 syns are for the peanut butter powder (I use PB2 from Amazon or you can get PBFIT from tesco).

Peanut Butter Oat Cup Recipe

  • 40 oats (hexb)
  • 50mls of skimmed milk ( 1.5 syns per 100ml so I would say 1 syn or (Part hexa)
  • 1 egg (protein)
  • 2 caps of Almond extract or a flavouring of your choice (free)
  • 1 tbsp cinnamon
  • 1 tsp of sweetener
  • PB2 powder (2 syns per level tbsp)

What you need;

  • Muffin tray
  • 3 silicone cases
  • Preheat your oven to 180 degrees

Measure your 40g oats and put in a jug with your milk and stir. Then add in your egg and mix throughly. Then add your sweetner and flavouring of your choice. Combine all together.

Place your silicone cases onto your muffin tray or tray, then pour in the mixture.

Now time to make your peanut butter. So you weigh out two tbsp of PB2. (It is 1 syn per tbsp) then you mix it with water and make the consistency you want. I like mine a little runny as when it cooks, it thickens.

Now you can lick the spoon 😋

Put into your oven on 180 for 20-25 mins. Then leave to cool for 3-5 mins.

Then pop them out and enjoy as they are or decorate it with Sweet Freedom choc shot.
Serve with some speed food and yogurt if you like, or if you’re having an SP day have some quark.

These muffins are perfect for an SP day because it used milk and not yogurt.

If you make them be sure to let me know here, YouTube or tag me on Instagram, Twitter, Facebook or add me on snapchat “justjulietta” as I’d love to see.

I hope you enjoy x

Getting back on track – daily food diary

So guys I’ve been so off plan it’s unreal. Two weeks ago I gained 9lbs shocking! But I went through a lot and my binge eating has been out of control.

Two days ago I managed to get some strength and motivate myself to get back on track properly. I got an SAS log and using my planner from Little Things Planners. So I thought it would be great to share with you my daily meal plan. I am also doing insta stories (videos) going through the food and diary as to how I use it so make sure you follow me on Instagram 😉

Tuesday meal plan

So I’m not doing great having my full hexa. I find it hard because no vegan cheese is hexa and I don’t drink all the almond milk. So something to work on. With the SAS log I’ve realised I’m writing after I eat, like way after so I need to reflect and change that. I must admit I’m super hungry but that’s adjusting to being back on plan and getting used to what I can eat on the fodmap diet within slimming world.

Also the dots on the page represents toilet habits! I hadn’t poo’d in over a week so this was awesome! So I need to see how many times I go and how long between. IBS is not fun.

Any questions please leave them below.

Thanks guys and remember!

Little Things Planners – Food diary

IMG_0435.JPG

I have a had a tough week with one thing or another and I ended up with a gain of 2lbs. I want a 100% week and what better way that than to use a food diary. You can get normal diaries off your consultant but I wanted something for myself and that was tangible. I thought of creating my own or using a journal but then I saw these journals on Little Things Planners on instagram.

The diary is clean, clear and laid out very well. You have your shopping list, meal planner, activity, water tracker, daily food diaries, including healthy extras and syns. I have spoken about the diary in my latest youtube video.

It is printed on quality paper and it has a plastic cover to keep it clean. I can be a messy pup at times!

I am so ready to tackle the week ahead and with my planner in toe, it will keep me in check.

Something else I received was a weight loss chart. It has 70lbs on it and every time you lose weight you colour in a circle! I am quite excited for this, I am a visual person, so I will be putting it up in the kitchen along with my certificates. So I can watch it being coloured in as the weeks go on and once I finish it, I will finally be at target!! This excited me greatly!

Please head over to Little Things Planners and check out the designs. Everything is customisable and I love that it has my initials! Anything personalised really floats my boat! The customer service is amazing and the turn around of custom diary’s and charts is quite quick. Impressive!

I love my diary! Check back next week to see how I did. If you don’t follow me on instagram you can by clicking here and you can see my daily diary 🙂
